We don’t like to speak too soon but we are pretty hyped for a brand new summer of love. We are ready to dream of long, barmy summer afternoons and warm nights once again. With that prospect comes the inevitable joy of eating outdoors. To help you enjoy outdoor dining and long weekends over a barbecue with family and friends once again, here are five ways that you can use M-EAT! In your summer salads to keep your diet healthy whilst enjoying all the goodness of M-EAT!:
Avocado and biltong salad
Ingredients:
● 100g M-EAT!
● 1 whole Romaine lettuce
● 10 cherry tomatoes
● 15 whole Olives
● 1 block Feta cheese
● 1 large Avocado
Method:
Wash all the dry ingredients. Slice the lettuce, halve the cherry tomatoes and cube your avocado. Mix them well together and add M-EAT!. Crumble feta cheese over the salad. Serve in individual portions with a squeeze of lemon.
Greek Salad with biltong
Ingredients:
● One cucumber of any size, sliced.
● 100 grams M-EAT!
● Four vine-ripened tomatoes, wedged.
● One green pepper, seeded and sliced.
● One red onion, sliced.
● A handful of olives
● 100 grams feta cheese, cubed
Method:
Mix all ingredients together in a large bowl. Set aside. Create a dressing with a quarter of a cup of olive oil, two tablespoons of red wine vinegar, minced garlic, some salt to taste and 2 teaspoons of oregano. Pour over the salad, mix well and serve.
Biltong and Caprese salad
Ingredients:
● 100 grams Mozzarella cheese
● One large salad tomato
● Olive oil to taste
● Handful Basil leaves
● 100 grams M-EAT!
Method:
Slice mozzarella and tomatoes and layer one on top of the other. Add a whole basil leaf to the top. Pour olive oil into the salad. Add fresh black pepper and spinkle the M-EAT! over the salad.
Biltong and citrus salad
Ingredients:
● Sliced grapefruit
● A handful of watercress
● Two tablespoons of avocado oil
● 100 grams M-EAT!
● 50 grams of goats cheese
● Salt and pepper to taste
Method:
Mix all ingredients together apart from avocado oil. Once mixed, pour over the oil and mix together well. Serve and enjoy!
Biltong and mixed greens salad
Ingredients:
● 100grams M-EAT!
● Half a pack of mixed green leaves
● 6 cherry tomatoes, halved
● Handful of blueberries
● Handful of dried cranberries
Method:
Combine all ingredients together in a bowl. Then dress the salad with olive oil, balsamic vinegar and juice of one lemon. Serve immediately.
